Yes, muffin time!! I've had a number of comments about it recently which always make me laugh. If you've been reading Be*mused for a while, you probably remember that each year I bring the breakfast muffins to our annual family gathering over Thanksgiving. As our kids and their cousins have grown and moved across the country and around the world for college and careers, it's become more difficult to get everyone together for the holiday like when they were little. But those who can make it still request the traditional foods, in variety if not in quantity. Thanks goodness muffins freeze so well!
Today I made six dozen, frantically preparing and popping each new batch into the oven as Molly, who's visiting from Texas for a bit, washed the bowls and pans while I ran in & out of the laundry room. We planned to drive to my sister's on Wednesday, but with the impending East Coast storm, the guys' work schedules were checked and rearranged and the four of us will be scooting out of here a day early.
In past years, I've shared recipes for some perennial favorites ~ Oatmeal & Cranberry, Chocolate Chip, Gingerbread and Toasted Almond & Apricot muffins. I'm cramped for time today so I've just linked these 'oldies-but-goodies' here if you're looking for something quick to make. We usually put out a fruit salad with a large tray of muffins in the morning ~ so easy to store (and travel with) and easy to serve. (I like to warm mine in the microwave for 20 seconds before eating.) Then, on to the turkey!
